Potato Pancakes

4 baking potatoes

2 eggs, lightly beaten

1/4 large onion

salt and pepper to taste

4 t. vegetable oil, plus additional for frying

Grate potatoes by hand into a strainer.

Grate onion into a separate bowl while letting potatoes drain.

Combine potatoes, onion, eggs, oil, salt and pepper. Over medium to high heat, coat a large frying pan with oil.

Add dollops of mixture with a soup spoon or tablespoon.

Fry until crisp and lightly browned on both sides. Serve hot with applesauce for dipping.
