4 medium russet potatoes, peeled, cooked and diced
2 medium onions, diced
6 sweet pickles, diced
1/2 green pepper, diced
1/2 c. celery, diced
6 hard-boiled eggs,diced
4 T. mayonnaise
Dressing:
1/4 c. vinegar
1/4 c. water
2 T. sugar, or to taste
1 T. flour
1 t. mustard
1 raw egg
Combine cooked potatoes, onions, pickles, green peppers, celery, hard-boiled eggs, and mayonnaise.
Combine ingredients for dressing in a pot and bring to a boil.
Stir vigorously until dressing thickens.
Taste and add more sugar if desired.
Pour over potato mixture.
