Apple Pie

1/2 c. unsalted butter

3 T. flour

1/4 c. water

1/2 c. sugar

1/2 c. brown sugar

pastry for 9-in. double crust pie (here's one)

8 Granny Smith apples, peeled, cored, and sliced


Preheat oven to 425 F.

Stir butter and flour in saucepan over low heat to create a paste.

Add both sugars and water, and bring to a boil.

Fit bottom crust into a 9-in. pie pan.

Fill with apples, and add the top crust, crimping the edges.

Gently pour the saucepan contents onto the pie.

Bake for 15 minutes, then reduce heat to 350 F. and bake for 35 - 40 minutes more, until golden brown.
