Kvas (Russian Non-alcoholic Drink)

2 1/2 gal. water

2 1/4 lb. sugar

1 t. raw yeast

1 t. citric acid

Bring water and sugar to boil in a large pot.

Cool for about 15 minutes and stir in yeast.

Let cool to room temperature and dissolve citric acid.

Leave overnight, and strain through cheesecloth into bottles.

(Flavorings such as fresh mint may be added.)
